Cyrus Shen, a restaurateur who earned his coffee grading certifications from Willem Boot, opened the shop in October 2025. Eater reported at the opening that it roasts on two Bellwether roasters and that each pour-over arrives with a card listing elevation, varietal, and processing.
On California Street, floor-to-ceiling glass runs along the street side. A pour-over bar of glass cone flasks and bean tubes stands in the window, with burlap sacks of green coffee stacked under a lit shelf of bagged beans, and a white marble bar runs down one side.
