Jen Apodaca started the roastery in 2019 after roasting since 2005 for McMenamin's, Intelligentsia, Blue Bottle, and The Crown. She launched the #shestheroaster campaign in 2017, won the 2019 U.S. Cup Tasters Championship, and placed second in the 2022 U.S. Roasters Championship.
As of October 2026, single origins on the shop page come from Ethiopia and Mexico, alongside house blends.
