Ryan Harden, a roaster for more than five years before going out on his own, started Camellia with barista Rob Watson, serving coffee to friends’ bars, bakeries, and restaurants around Sacramento. A cafe followed in 2018 in the primary stall of the WAL Public Market, and in fall 2022 the pair took over a former Starbucks and brought the roastery under the same roof.
As of October 2026, Prism, its rotating single-origin line, comes from smallholders in Huila, Colombia, and the shop also lists a Vietnam lot from Dung K’No. The Ethereal house espresso blends coffees from the Americas and Africa.
