Frank La, a former barista competitor and quality director at Copa Vida, started the roastery with Michelle La as a subscription business. In 2021 it roasted on a Loring S35 Kestrel in a shared downtown facility, and it sorts its coffees into four categories: Dark & Bold, Rich & Smooth, Bright & Lively, and Unique & Surprising.
La won the 2024 US Barista Championship, and the roastery took third at the 2022 US Roaster Championship. It also roasts the house blend for The Wild Fox in San Francisco. As of October 2026, its single origins come from Brazil, Colombia, El Salvador, and Honduras.
